COMPANY HISTORY

Colline di Sopra is an organic winery founded in fall 2006. It is situated on the slopes that overlook and slowly degrade from Montescudaio into the Cecina Valley, in a sunny area at an altitude between 120/200 meters and 10 kilometres far from the sea. We have planted 5 hectares of new vineyards on a virgin plot, selecting the most suitable clones in consideration of the soil and the predominant local winds.

OUR MISSION

Our upscale quality standards are motivated by our love and respect for the ecosystem of which we are part of. That is the reason our vineyard is organically certified and why we adopted renewable energy and along with a high attention to water resources issue.

THE COLLINARI

We are a great team! The sensibility in attending plants, our dedication to work in the fields, the precision and the technical know-how in the wine cellar are all necessary elements to follow the evolution of that exciting and living matter which is called wine. Moreover we are always deeply aware of contribution that each of us can give to improve the environmental conditions of our territory we are proud of!

Organically certified grape varieties: Sangiovese, Merlot, Cabernet Franc, Cabernet Sauvignon, Petit Verdot, Syrah and Moscato Bianco. All varieties are subjected to an attentive selection during the year and at harvest time in order to reach the best possible quality.

 

Wine-growing area: 5,2 hectares.
Density per hectar: 6600 plants.
Method: cordon with an armor with a double cage to contain the vegetation.
Exposure: NE / NW It is a sunny and breezy area with land and sea winds.
Altitude: 120/200 metres.
Distance frome sea: 10 km.

 

Our soil consists mainly of clay and it is rich in minerals. It is a medium pasted earth with small pebbles that allow effective drainage. Pliocene marine sediments can be found.

 

In our wine cellar, built into the hillside and topped by a large roof, we select carefully only the best grapes for our wine. The filling of the tanks occurs by dropping from above and the use of pumps is greatly avoided.

 

The inside of the cellar is divided into three zones: vinification, aging and the storage area . For a perfect processing we control the temperature and the room climate with natural methods, storage is in air-conditioned enviroment.

 

We have installed a photovoltaic power plant on the south facing roof of the wine cellar to cover a part of our energy consumption. The rainwater collected from the roofs and from the drainage of the vineyards are carried into a water reservoir and are used for the treatments in the vineyard and the cleaning of the agricultural vehicles.

MOSCATO BIANCO

White dry wine from Moscato aromatic vine variety grape: in the mouth it is savory and multifaceted, with a vivid freshness and a remarkable finish. Extremely versatile in the table, excellent with substantial and tasty recipes.

SANGIOVESE 100%

Sangiovese 100%: quintessentially the Tuscan vine varieties, it takes the proximity of the sea, assuming a Mediterranean appeal. It exibits a stunning charm and goes perfectly with traditional Tuscan dishes, game bird and aged cheese.

MERLOT, SANGIOVESE, CABERNET SAUVIGNON, SYRAH

It represents the key to the Colline di Sopra universe. Its name is an identity card: a wine of the wind, that is what distinguishes the northern exposure of our vineyards. Suited for all courses and even as aperitif “in red”.

MERLOT, SYRAH

Exciting bouquet, seductive in the mouth where reveals a double personality, given by velvety Merlot and mysterious Syrah. Perfect with read meat, roasts, stews, medium aged cheese and Tuscan “ribollita” soup.

CABERNET FRANC, PETIT VERDOT

The red magnetic nuance tells about an imperious wine. That’s it! Complex bouquet, powerful temperament, balance and strong persistance. Excellent match with elaborate dishes based on red meat, game bird, furred game, roasts, stews and aged cheese.

MOSCATO BIANCO PASSITO

Luis, produced with 100% Moscato Bianco -a vine variety native of Piedmont-, has found a perfect terroir in our hills and constitutes a homage to Luisa Silvestrini’s origins, therefore Luis is her domestic nickname.
